Winning numerous awards the 60 seat reaturant went through a substential refurbishment, adding a wine bar and cellar, bistro, garden terrace and roof top bar in 2018 becoming one of the top 100 restaurants in 2019.

Modern Australian casual fine dining using traditional French and international methods with local ingredients. Seafood was a big part of the menu, as the fishermen were just on our doorstep.
I took over the business in Dec 2004. After refurbishing the the restaurant and bar reopened the doors in early 2005.
Introducing new menus and function packages, setting new training and operational standards.
I believe in hands-on management and training to ensure ongoing quality and guest satisfaction.
During the 6 years of operating, we won numerous awards in Brisbane, Queensland and Australia-wide.
Bookkeeping, marketing and ensuring the servicing of all equipment was just another task in running the business.

Purchased the business and property at the end of 2009 and reopened it after some minor changes and updates early 2010.
Cafe, Bistro and Deli with approx 60 seats
Harlequin was the first time I owned 2 businesses at the same time. With Amis being the flagship, I hired competent staff and trained them with the help of my key people from the Restaurant.
The cafe was open 5 days a week in the off-season and 7 days during peak season for breakfast and lunch.
Using only fresh ingredients, the menu was simple, but creative and flavoursome.
Coffee and tea were very important to us, so we ensured monthly training with coffee makers from the mainland.
The cafe was only 300m away from the beach, so foot traffic was very regular and the cuisine was fast and fresh.
In the deli, we offered local produce as well as boutique articles anyone could use while on holiday.

Award Winning French Restaurant in the beautiful suburb of Toowong, nestled inside a 80 year old Queenslander in Miskin Street.
My first Restaurant. 75 seats on two levels and a small garden out the back.
Traditional French cuisine with a creative touch, which was a little unknown at this time in Brisbane. The response was great and we won our first awards within the first 12 months including Best Restaurant and Best Chef Owner. Which I am still today very proud of.
The restaurant was a learning curve for me. Trying to understand how to run and operate a business was yet so different to just working in one.
Online banking was just introduced and we were one of the very first customers using it. And built a website at the same time. It was unknown at this time that restaurants could have a website don't forget.
We sold the business in 2002 to Bruno Loubet.
