The best way to build a good and long-lasting house is to set a good foundation first.
Here are some core 'materials' I use to build.

Food - Keep it simple and Fresh
Knowing where your food comes from is always an advantage. All my career as a chef I was very connected with farmers, fishermen and any other producer.
To select the right product for you, I have always followed one simple idea - If mother nature has made this product so beautiful, why f.... around with it too much? Keep it simple, keep it fresh and cook it to perfection.

Off-Grid Living
Living remote or off-grid certainly has its challenges, but it is a fantastic way to live and work.
Every day could be an adventure or a quiet affair.

Training
I was very lucky to receive amazing training during my time as a younger apprentice and chef.
But I didn't just wait to get taught on the job, I have been pursuing knowledge anywhere I could. Travelling the world and living food adventure tour.
Sharing my experiences with staff, guests, clients or business associates.

Hospitality - The Empty Chair
When I was young and before X-mas became a normal workday I celebrated X-mas eve with my parents and grandparents with a nice dinner.
Every year there was an empty chair at the table with a full setting of plates, glasses and cutlery.
My mum simply said: Just in case should someone come by. We are prepared and that person can join.
Until today this is the pure and simple meaning of Hospitality to me.

Teamwork
Having the right people on board is one of the key factors in being successful and productive. Covering each other's backs, working hard and having fun at the same time.
The balance between professionalism, trust, mutual understanding and respect is very important.

An Open Mind.
You are never too old to learn.
Have an open mind to anything new.

Honesty - Not always the easiest way
It is easy, even though it is not, to say what's on your mind. Listening to others' honest opinions.
Being open and honest will create healthy, lasting and honest relationships.. And it might even save a business.

Travelling
This is something I have always enjoyed. Broaden my horizon, if it was all around Europe, in Africa, Asia, Australia or the Middle East. Every place has its own experience, culture and people.
It is a very easy way to learn more about everyone's food culture, with them at their own homes.

Recycling
Growing up and being trained in Germany gave me a very good introduction and understanding of how and why to recycle.
Finding sustainable ways to recycle, reuse and reduce waste.
Everybody has to do their part. This can and will safe money and create jobs and opportunities for others.
