Rangelands Outback Camp is an exclusive off-grid luxury glamping retreat/camp/experience about 20-minute drive from Winton in the Queensland Outback. Located on top of the Rangelands Jump-Up/Mesa with stunning views, unforgettable sunsets and night skies you will never forget. It offers self-sustained oversized belle tents and includes all catering including breakfast, dinner, sunset canapés, cheeses and drinks. 

In March 2022 I was in charge of the opening of Rangelands operations, logistics, basic maintenance, and all service and culinary needs for the camp, working closely with the duty manager and the owner. Offering photos, videos and drone shots for marketing material.

It is a lifetime experience. Learning about the Outback, wildlife, dinosaurs, history and much more, working completely remotely while offering outstanding service and culinary delights.

Overviewing the closing of the resort in October/November 2022 for the summer. Creating a Guest information photo book and 200 page Staff manuals for all needs to be in a remote area (operational, maintenance and troubleshooting handbook,) 

Setting operational and hospitality standards, creating recipe books with plenty of supporting pictures to ensure everything is in place for the resort's smooth and organised reopening in April 2023 and guaranteeing its sustainability in the future. 

Returned in 2023 for another season, keeping an amazing 5-star rating over all media platforms.

Onsite Manager, Chef & Host

Wilson Island is an exclusive island retreat catering and entertaining for up to 12 guests at a time. Serving Breakfast, Lunch, Afternoon Cheese or a small seafood treat on the beach with Cocktails and a two-course dinner. 

My responsibility besides looking after all catering needs was guiding the guests to spots on the island to snorkel or bird watching and answering questions about the island and its wildlife.

Housekeeping, restocking, ordering (deliveries every 2 weeks) and reception are only a few other duties we were taking care of. 

Living full time on the island 7 days on and 7 days off.

Working with another couple (covering our 7 days off, all living on Wilson Island in the same house).

We found during this time that the 4 of us make a fantastic team, caring about nature, hospitality and our guests. Helping each other out, even on our days off. 

​

The guests surely loved the idea of having their private guide on the island or snorkel instructor.

F&B Operations Manager incl. F&B Product Development and Sales 

Located on the entrance to the Scenic Rim in Queensland, Australia. Summer Land Camel Farm is the largest Camel Dairy Farm and Camel Dairy processing in Australia (3rd largest in the world). Attached is a vast growing Tourist sector Homestead cafe and a Farm Shop selling dairy and skin care produced by Summer Land Farm and of course souvenirs. 

Open 7 days a week offering camel rides, farm tours and more. Our monthly themed markets with over 70 stalls were visited by over 2000 people time. 

Supporting and training the food and Beverage team, product development, menu designs, quality control, costing, cost control and production/processing. 

Overlooking and managing all aspects of food and beverage Sales (dairy products, meat, fine goods and vodka) on the farm and to our Retailers, Restaurants and Farm Shop customers. Building lasting relationships with customers and ongoing care of their needs. 

 

Organising and overseeing interstate, international and online delivery logistics, working with transportation companies to ensure safe and timely deliveries. 

Planning and organising larger events (monthly markets, Long Lunches, Larger special events (Eat Local Week, Buy from the Bush Festival etc.) with the tourism team. 

Representing the farm on Festivals such as the Brisbane / Sydney / Melbourne  Mould Festival (2021).

Consulting SLC with the planning of possible development of the Tourism sector (extension and refurbishment of the onsite facilities) in the future incl. Off-grid Glamping.

Chef de Cuisine - CO-Owner

C'est Bon is located in the Clarence Building, one of Brisbane oldest Heritage Properties.  â€‹

Winning numerous awards the 60 seat reaturant went through a substential refurbishment, adding a wine bar and cellar, bistro, garden terrace and roof top bar in 2018 becoming one of the top 100 restaurants in 2019. 

In charge of the kitchen operation, Costing, menu planning and staff training.

With maintaining high standards of food and service quality, constant training and caring we achieved an average rating of 4.7 throughout all media platforms during the 8 years.

Involved in major refurbishment in 2018: Kitchen design to fit the extension and widening range of offerings, seating and opening times.  

Working with branding and marketing companies, architects, and interior designers, Creating and implementing new and modern breakfast, lunch, bistro, bar, function and dinner menus considering the different costings for each outlet. Not loosing the french theme and traditional aspect of the food.

Working closely with local farmers, using their produce, as well as introducing a new recycling and energy saving program (85% sustainable) for the business.
