About Me
My Background
I was born in Dijon, France.
I studied Hospitality at a hospitality school for 8 years while I worked at different restaurants, catering companies, supermarkets to support my study.
After graduating, I got my first job in a 3 stars Michelin restaurant & 5 stars hotel establishment ( Relais Bernard Loiseau ) where I just passed my final exam.
They gave me a job at the end of my audition !!
I proudly worked there for a year and decided to travel!
Australia was supposed to be the first stop but I never left...

Rangelands Outback Camp

Rangelands Outback Camp is an exclusive off-grid luxury glamping retreat/camp/adventure about 1600 km from Brisbane and a 20 min drive from Winton in the Queensland Outback. Located on top of the Rangelands Jump-Up/Mesa with stunning views, unforgettable sunsets and night skies you will never forget.
It offers self-sustained oversized Safari Bell tents and includes all catering including breakfast, dinner, sunset canapés, cheeses and drinks.
In charge of the operations, housekeeping and all services, working closely with the owner.
It is a lifetime experience. Learning about the Outback, working completely remotely while offering outstanding service and culinary delights in a completely secluded spot.
Rangelands Outback Camp is open from April to November each year.
Overviewing the closing of the resort in October/November 2022 and the reopening in march 2023. Returning with a 5-star rating on Google.

Wilson Island Resort
Wilson Island is a small remote adult only island on the Great Barrier Reef off Gladstone
Employed as a Management Couple : Chef & Host
As the host, I was responsible for the overall operational activities :
- meeting, greeting, entertaining and farewelling guests
- cleaning, presenting of guests facilities
- servicing of guests tents
- assisting chef with service / cleaning / special events
- hosting sunset drinks on the beach
- coordinating guest arrivals / departures
Looking after a maximum of 12 guests with a 7 days on / 7 days off roster.
This was THE opportunity of a lifetime to live, use our passionate & professional skills to look after people in a very special place.

Sponsored from France to move to Australia to oversee the opening of C'est Bon with the owner.
I was in charge of the front of House, staff training, the wine and beverage list and purchase.
Week to week rostering and cost control were some of my responsibilities, besides the day to day running of the restaurant, computerising the booking system, running events and in charge of marketing.

Restaurant Owner
In 2012 I purchased the restaurant and have been operating it until the end of last year.
C’est Bon Restaurant kept an overall standard of 4.7 out of 5 average on all internet platforms. Last year we were number 56 in the top 100 restaurants in Queensland.
Additional to the duties as a manager I took on the responsibilities of an owner.
In 2018 the restaurant had a grand revamp and restoration, as it is an old heritage building.
During the refurbishment I changed the booking system (Bookit Now), bookkeeping (Xero), rostering systems to streamline our office time more so we could focus more on the operation.
We improved marketing and rebranded the business with the help of a branding company.
